  1. Thinly slice some red onion, and leave to pickle in some red wine vinegar, while you prepare the rest of the sandwich (see my recipe 'Tex's Pickled Red Onions' in my profile.
  2. Toast the bread on one side, and butter the un-toasted sides.
  3. Season both slices on the buttered side with salt and black pepper and a little dried thyme.
  4. Add your filling to the toasted side of one slice of bread. Some thin-sliced Swiss first....
