- Wash both the leaves and stems well. Then chop the leaves roughly. Also chop the stems into pieces of 2-3 inches length. Keep them aside..
- Blend mustard seeds, garlic cloves and green chilli to a fine paste..
- Heat oil in a pan. Add onion and fry till brown. Add potato cubes and stems of malabar spinach. Next add turmeic powder, chilli powder, salt and saute for a while..
- Now add mustard paste with 1/2 cup of water or as needed. Cover and allow to cook for 10 minutes on a medium heat..
- Open the lid and finally add malabar spinach leaves. Cook it covered for 4-5 minutes or till water dries up. Turn off the flame..
