Kerala style Pork Fry instructions
- In a pressure cooker,combine pork,Chilli,corriander,turmeric,vinegar,salt,chopped onions,crushed ginger & garlic & cook till done..
- Meanwhile pulse the grated coconut in the mixie twice sothat it's evenly crushed (not a paste).
- In a nonstick pan heat 1 tsp oil & add the crushed coconut & fry.when it starts to change color,add the whole spices & Saute tillyhe coconut is well browned.keep this aside..
- Open the cooker & pour the stock to a wide nonstick pan & cook till water almost dries..
- Now add the cooked pork into this & half of the fried coconut mixture to it & cook till it starts to brown..
- Add the pepper & garamasalas & the remaining browned coconut & continue frying in medium heat till nicely browned..
