- With 6 tortillas cover the pan.
- In a large bowl mix the beans, meat, cilantro, Pace picante sauce, and 1/4 of the enchilada sauce and mix it up.
- Put half of the mixer in the pan and cover with 1/2 cup of cheese.
- Cut 4 to 5 tortillas in half and cover the cheese and mixer.
- Put the rest of the mixer on top and cover with 1/2 a cup of cheese cover again with 4 to 5 half cut tortillas.
- Pour the rest of the enchilada sauce on top and 1 cup cheese cover with foil and put in oven.
- Cook for 25 to 30 minutes then take the foil off and cook for another 15 minutes or till tortillas are a bit crispy on the side of the pan.
